Sandwich with veal oyster and tuna cream

Ingredients

  • 2 dl chicken bouillon
  • 4 kalfsoesters van 1 cm dik
  • 2 cans of tuna in water (drained weight 100 g per can)
  • 2 eggs, hard-boiled
  • 2 anchovies
  • 3 tbsp mayonnaise
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1 bag of rucola
  • baguette, cut into 4 pieces
  • 2 ripe vine tomatoes, sliced
  • capers, hand
  • white pepper from the mill
  • 1 bunch of radishes

How to prepare

A delicious sandwich with veal oyster and tuna cream.

 

 

Preparation

  • 1 Bring the stock to the boil.
  • 2 Cook the veal oysters in the broth for four minutes. The meat must still be rosé inside. From the broth you can make a tasty soup.
  • 3 Make the tuna sauce. Turn in the food processor, blender or with the hand blender the tuna with the eggs, anchovies, mayonnaise, olive oil, lemon juice and 2 tablespoons broth completely smooth.
  • 4 Divide the rocket over the baguettes.
  • 5 Put the calf oysters on the rocket.
  • 6 Generously spread tuna sauce on the veal oysters.
  • 7 Garnish the sauce with tomato slices and capers and sprinkle with white pepper.
  • 8 Serve the baguettes with radishes.
