Coconut tuna spread

Ingredients

  • 1 chili
  • 1 red onion
  • 1 tin of Skipjack tuna in water
  • 4 curry leaves
  • 1 lime
  • salt
  • handful of grated coconut
  • 500 g white flour
  • 50 ml coconut oil
  • 200 ml hot water
  • 200 g grated coconut

How to prepare

A traditional dish from the Maldives, where our Fishy Friends are catching their delicious tuna! This dish is so amazing as a healthy snack on a piece of toast with a nice cup of tea, lunch, or even Sunday breakfast! Serve it with a piece of lime or lemon.

Preparation

  • 1 Cut the red onion finely chopped.
    Cut half a chilli finely chopped and add to the onion in a bowl.
    Cut the four curry leaves finely chopped and add to the bowl.
    Cut the lime in half and squeeze one half’s juice on the bowl.
    Add half a tea spoon of salt.
  • 2 Wear a plastic glove and mix the ingredients by hand, squeeze hard so the juices from the onion come out and mix with the other ingredients.
    Add a hand of grated coconut and mix it again.
    Drain the tuna can and add the tuna to the mixture, knead it together again.
    Your tuna spread with coconut is ready!
  • 3 Take 500 gr of white flower and mix it with 50ml coconut oil, 200 ml hot water and 200 gr of grated coconut.
    Add salt according to taste.
    Knead together to a dough.
  • 4 Take a ball of dough, size of a golf ball.
    Press the ball to a circle, until it’s 5cm in diameter.
    Hold the dough in one hand and use your other hand to put some tuna spread on the dough.
    Fold the dough back so it becomes some sort of ball again
    Hit your ball flat with your tuna inside until it has a thickness of approximately 1 cm.
  • 5 Put your frying pan on medium-heat and lay your tuna packages in your frying pan (without oil since this is already in the dough).
    Fry your tuna packages 2 minutes on each side, than turn around again and fry again 2 x 2 minutes. In total 3 times. Keep an eye on the dough, whether it’s done depends on the thickness of your dough.
    Serve with half a lime.
    Your tuna packages are ready!
