Mixed fried seafood

Ingredients

  • 160 g. flour,
  • 1 egg
  • 200 ml. beer
  • 1 lemon, in writing
  • 2 small artichokes
  • 2 red peppers
  • 12 green asparagus
  • 200 g. smelt
  • 8 squids, cleaned and cut into rings
  • 16 medium shrimps, peeled, intestinal tract removed
  • peanut oil, for frying
  • salt

How to prepare

Musclering is a very small fish, you eat them with head and all, right out of the fryer. Muscle has a fine taste, but above all a characteristic smell. It smells like cucumber. That is why muscle is also called cucumber fish. In this Fritto Misto, the cucumber fish is fried together with squid and shrimp and served with fried artichoke, paprika and green asparagus in beer batter.

Preparation

  • 1 For the batter, mix the flour, egg and beer with a whisk until smooth. Add some salt. Put the batter in the fridge for half an hour. The colder the batter, the better the result.
  • 2 Grill the lemon slices in the grill pan for 1-2 minutes on both sides. Cut the artichokes into 8 segments, remove the 'hairs' with a small knife and also remove the outer hard leaves. Also cut the peppers in half and remove the seeds. Cut the halves into thin strips. Cut one cm from the hard underside of the asparagus.
  • 3 Heat the oil in a deep fryer or deep pan with a thick bottom to 180°C.
  • 4 Put the smelt, squid and shrimps through the flour and fry for 3-4 minutes until golden brown. Drain on kitchen paper. Put the vegetables through the batter and fry for 2 minutes until crispy. Drain on kitchen paper.
  • 5 Sprinkle the fried fish and vegetables with salt and serve with the slices of grilled lemon.
