Toast with tender tuna salad and mackerel

  • 1 white baguette
  • 1 can of skipjack tuna in water (160 g), drained
  • 8 tablespoons mayonnaise
  • Grated rind 1 lemon
  • 2 tsp. capers
  • 1/2 tablespoon fresh parsley, finely chopped
  • Pair of lettuce leaves, washed
  • 1/2 red onion in rings
  • 1/4 Granny Smith (apple), peeled, in small strips
  • a handful of rocket salad
  • 1 can of mackerel (125 g each), drained, fillets in large pieces
  • 1/4 bunch chives, finely chopped
  • salt and pepper

How to prepare

Whether you are looking for a delicious lunch dish or the perfect snack for drinks: These toasts with tender tuna salad and mackerel are an absolute all-rounder – quick, easy and healthy!


  • 1 Preheat the oven.
  • 2 Cut the toast into four equal pieces. Place the bread pieces on a baking tray and toast for 3-5 minutes until golden brown.
  • 3 Drain the tuna and mix with half of the lemon mayonnaise, capers and parsley. Season with salt and pepper. Cover 2 pieces of toast with lettuce leaves, the tuna mixture and a few onion rings.
  • 4 Spread the other pieces of toast with the remaining mayonnaise and top with rocket, mackerel pieces and apple strips (season with pepper).
  • 5 Serve the toasts on a plate or board. Garnish with chives and sprinkle with the remaining lemon juice.
