Masala grilled sardines

Ingredients

  • 6 sardines
  • 1/2 tsp turmeric powder
  • 2 tbsp chili powder
  • 2 tsp black pepper
  • ¼ tsp salt
  • coconut or vegetable oil
  • kitchen paper

How to prepare

This is the kind of this you want to serve on your summer night dinner party! The sardines are golden-brown and have a nice kick to them, and would work really nice with a fresh herb salad and vinaigrette.

Preparation

  • 1 Descale the fish, cut off the fish tail, top fin, underside and head.
    Take out the guts.
    Score the fish so the spices can get in.
  • 2 Put turmeric powder, chilli powder, pepper and salt in a bowl and mix them.
    Roll in and cover the sardines with the mixture.
    Fry the sardines 3-5 minutes on each side.
    Pop the sardines on some kitchen paper to get rid of the oil.
