Creamy aioli

  • 2 cloves of garlic, coarsely chopped
  • 2 egg yolks
  • 100 ml sunflower oil
  • 100 ml olive oil, extra virgin
  • 2 tsp lemon juice
  • salt and pepper

How to prepare

This creamy aïoli goes perfectly with, for example, fried or fried fish. To prepare a ‘real’ traditional (and less creamy) aïoli you can replace the egg yolks with some pieces of white bread soaked in milk. Then immediately add the bread to be ground with the garlic and salt.


  • 1 Crush the garlic together with some salt in a mortar until it becomes a garlic paste.
  • 2 Beat the egg yolks through with a whisk or fork (if your mortar is too small, put it in a bowl).
  • 3 Add the sunflower oil and olive oil drop by drop and keep beating continuously. Season to taste with lemon juice, salt and pepper. Keep in the fridge or serve with grilled prawns or fried fish, for example.
