Sardine snacks with chickpea puree and roasted garlic

Ingredients

  • 25 cloves of garlic, peeled
  • olive oil
  • salt
  • pepper
  • 1 red onion
  • 1 lime
  • 250 g chickpeas (jar or tin)
  • sesame oil
  • 2 tins of sardines in 120 g water or olive oil, drained
  • thin crackers
  • sea salt
  • cayenne pepper

How to prepare

These delicious sardine snacks with chickpea puree and roasted garlic. Delicious as an appetizer or as a snack!

 

Preparation

  • 1 Set the oven to 180 °C. Place the garlic cloves on aluminum foil, drizzle with some olive oil, salt and pepper. Fold and put the package in the oven. Squeeze one of the cloves after 20 minutes. If this is soft through and through, take the package out of the oven.
  • 2 Peel the red onion and cut the skirts into triangles.
  • 3 Heat some olive oil in a frying pan and fry the red onion over medium heat until it gets a tan. Remove the pieces from the pan and set aside.
  • 4 Grater of the lime fine strips. Do not take white of the skin, this tastes bitter.
  • 5 Put the chickpeas in a colander and rinse. Drain well. Turn the chickpeas into a loose puree with some sesame oil and 5 roasted cloves of garlic. Season to taste with some lime juice, pepper and salt.
  • 6 Prak the sardines with some olive oil coarse.
  • 7 Divide the red onion over the crackers.
  • 8 Divide the sardines over the onion.
  • 9 Spoon some chickpea puree on the sardines.
  • 10 Press the roasted garlic cloves into the puree.
  • 11 Sprinkle the crackers with some sea salt, cayenne pepper and the lime.
