Salmon with Salsa Verde of basil, parsley and mint

Ingredients

  • 1 salmon fillet, deep-frozen
  • 1 garlic clove
  • 20 g capers
  • ½ tbsp Dijon mustard
  • ½ tsp red wine vinegar
  • 1 lemon
  • a handful of basil leaves
  • a handful of parsley leaves
  • a handful of mint leaves
  • 70 ml extra virgin olive oil
  • oil for baking
  • salt and pepper

How to prepare

A great salmon dish is difficult? Nothing can go wrong with this recipe! Serve the crispy fried fish with a fresh Salsa Verde of basil, parsley and mint – a delicious dish that everyone will love.

Preparation

  • 1 Defrost the salmon in the package in the refrigerator.
  • 2 Remove the salmon from the packaging.
  • 3 Dab salmon dry on both sides.
  • 4 Salt on both sides and set aside.
  • 5 Garlic, capers, mustard and red wine vinegar with peel and juice ½ Put lemon in a mixing cup. Season with salt and pepper and add the olive oil. Mix the ingredients with a hand blender and then set aside. Ready is the Salsa verde.
  • 6 Heat a pan over high heat and add a tablespoon of oil.
  • 7 First fry the salmon on its skin side for 3-4 minutes to make it crispy.
  • 8 Turn the salmon over and fry at low to medium heat for another 2-3 minutes.
  • 9 Remove the salmon from the pan and serve with the salsa verde, a lemon wedge and, if desired, some extra olive oil.
