Thai Tuna Power Bowl
This colorful and flavourful Thai Tuna Power Bowl is easy to make and ideal for a healthy weekend lunch!

Preparation method:
Preheat the oven to 190°C.
Drain the chickpeas and rinse them well with water. Gently pat them dry with kitchen roll. Mix the chickpeas with olive oil and spread them on a lined baking tray. Roast the chickpeas for 25 minutes. Season the roasted chickpeas.
Prepare the quinoa as directed on the packaging and pack it into the bottom of a bowl.
Add the spiralised courgette noodles, carrot, cabbage, roasted chickpeas, and skipjack tuna (drained) to the bowl.
Garnish with coriander and add as much Thai dressing as desired.
