As wild as Alaska itself — with this crispy rösti topped with our smoked wild sockeye salmon, fresh herbs, and lemon crème, you’ll taste pure, natural flavors straight from the wild. This recipe by Sebas Vis shows just how good wild can taste.
Mix the grated potatoes and onion with salt and pepper. Place in a clean kitchen towel and squeeze out all the excess moisture.
Melt the butter with olive oil in a frying pan. Add the potato mixture and press it down firmly. Cook slowly over medium heat. After about 5–10 minutes, flip the rösti using a plate. Cook for another 5–10 minutes until golden and crispy.
Grill or pan-roast the broccolini with a little oil and salt. Finish with pepper and a squeeze of lemon juice.
Mix the crème fraîche with the zest and juice of half a lemon, plus salt and pepper.
Pick the basil and dill, then toss them with the microgreens, zest and juice of the remaining half lemon, a drizzle of olive oil, salt, and pepper.
Assemble your dish: top the crispy rösti with the lemon crème, roasted broccolini, herb mix, and wild salmon. Enjoy!
