Herring butter with miso
Holy Herring! This miso-herring butter will make you ditch regular herb butter for good. It’s creamy, savory, and has a bright citrus kick—perfect on crusty bread, roasted veggies, or even a warm piece of fish. Super easy to make, full of bold flavor. Put it on the table and watch it disappear.

Place the herring fillets and miso in a small food processor and blend into a smooth mixture. Add the butter in chunks and process until light and whipped.
Grate in some lemon zest, squeeze in a bit of lemon juice, and stir through the herbs. Season with black pepper to taste. No need for salt—the herring and miso bring plenty of it.
Serve direct of chill in the fridge until firm. Take it out in time to soften so it spreads beautifully.
