350 g verse ansjovis, schoongemaakt (vraag je visboer)
100 g bloem
4 el geklaarde boter (ghee)
1 el roomboter
1 teen knoflook, in schijfjes
3 el pastis
½ bosje peterselie, blaadjes afgehaald, fijngehakt
2 handen vol lamsoor (of zeekraal)
rasp van ½ citroen
zwarte peper en zeezout
Zo maak je het
In geklaarde boter gefrituurde ansjovis met lamsoor en knoflook. Dit overheerlijke gerecht met zilte zee groenten zet je in een handomdraai op tafel! Geen lamsoor voorradig? Kies dan voor zeekraal!
Bereidingswijze
1 Verwarm de geklaarde boter in een koekenpan. Haal de ansjovis door de bloem en bak ze in 2-3 minuten per kant goudbruin in de boter.
2 Voeg de extra roomboter, de knoflook en pastis toe en laat de knoflook licht kleuren. Roer op het laatste moment de peterselieblaadjes en lamsoor erdoor, verwarm nog 1 minuut en verdeel over vier diepe borden. Rasp de citroen erboven en serveer met zwarte peper en zeezout.
