Mix the crème fraîche with the sour cream, chopped dill and chives, lemon juice and zest, and a good pinch of salt and pepper. Stir in the pre-chopped red onion and pickles that come with the herring. Give it a quick mix until you’ve got a smooth, fresh, and creamy topping.
