Use the oil from the can of anchovies for extra flavor—drizzle it right over the veggies!
Preheat the oven to 400°F (200°C), using both top and bottom heat if possible. Line a baking sheet with parchment paper.
Trim the ends off the asparagus tips. Place the asparagus and other vegetables on the baking sheet. Drizzle with olive oil and toss to coat evenly. Season with salt and pepper.
Roast the vegetables in the oven for 30 minutes.
Remove the vegetables from the oven and let them cool for 10 minutes. Drizzle with olive oil (or use the oil from the can of anchovies) and toss with the lemon juice. Top the salad with anchovies and fresh dill.
