Use the oil from the can of anchovies for extra flavour—drizzle it right over the veggies!
Preheat the oven to 200°C (400°F) top and bottom, if possible. Line a baking tray with baking paper.
Trim the ends off of the asparagus. Place the asparagus and other vegetables on the baking tray. Drizzle with olive oil and toss to coat evenly. Season with salt and pepper.
Roast the vegetables in the oven for 30 minutes.
Remove the vegetables from the oven and let them cool for 10 minutes. Drizzle with olive oil (or , for extra flavour, use the oil from the can of anchovies) and toss with lemon juice. Top the salad with anchovies and fresh dill.
