
Leek Tart with Sardines and Tarragon
This leek tart with sardines and goat's cheese looks extremely festive, and it tastes just as amazing! Make the tart a day in advance and serve it cold, or serve it fresh out of the oven. Enjoy!
Heat a splash of olive oil in a frying pan over medium heat and sauté the garlic and onion for 3-4 minutes until soft. Add the leeks and cook for another 3-4 minutes. Let the mixture cool slightly.
In a bowl, whisk the eggs and season with salt and pepper. Stir in the cooled leek mixture and set aside. Meanwhile, preheat the oven to 200°C (400°F).
Line a tart pan with baking paper. Melt the butter in a small saucepan. Place a sheet of filo pastry in the tart pan and brush it with the butter. Place the next sheet slightly rotated on top and repeat until the tart pan is fully covered.
Pour the leek mixture onto the pastry dough, press the slices of goat's cheese into it, and distribute the sardines on top. Sprinkle with the tarragon.
Bake the tart for 20 minutes until golden and cooked through. Serve warm.
