Give your sardines a smoky twist Want to give your sardines a smoky twist? Turn your tin into a BBQ! By lighting a piece of paper towel soaked in the oil, you gently warm the fish while giving it a subtle smoky flavor. Think of it as a mini BBQ, straight from the tin. Perfect for a picnic, camping trip, or outdoor happy hour.

Safety first: Use unbleached paper towel, place the tin on a sturdy, heat-resistant surface, and remove the entire lid before you begin. Never leave the flame unattended.

Good to know: Our cans are heated during the canning process and feature a BPA-free lining that is safe for food contact. With this hack, only the top of the open can is briefly heated to create that subtle smoky flavor; the rest of the can barely gets warm. That said, heating the can over an open flame has not been specifically tested. If you decide to try this hack, you do so at your own risk, and always remove the entire lid before lighting the paper.

How to make smoky sardines

For the best results, use sardines packed in olive oil or chili oil. They contain a little more oil than sardines in tomato sauce, which helps the paper burn properly.

Found the right tin? It's incredibly simple. Fold a sheet of unbleached paper towel in half, place it on top of the open tin, and gently press it into the oil. Light the paper and let it burn for 6 to 8 minutes. The longer it burns, the smokier the flavor.

Once you've reached your desired smokiness, carefully blow out the flame, let the tin cool for a moment, and remove the paper. That's it! Your sardines now have a delicious, subtle smoky flavor. Top them however you like—or try one of our three favorite combinations below.

Smoky chili oil sardines with whipped feta, roasted peppers & basil

What you’ll need (serves 2):

  • 1 can Fish Tales sardines in chili oil
  • 3.5 oz feta
  • 2 tbsp yogurt or crème fraîche
  • 1 roasted red bell pepper (jarred or homemade)
  • Fresh basil
  • Salt & pepper
  • Toasted bread

How to make it: Blend the feta with the yogurt until smooth and spreadable. Season with black pepper. Spread generously over toasted bread, top with roasted peppers, add the smoky sardines, and finish with fresh basil and a pinch of salt.

Smoky sardines in olive oil with mango chutney, red onion & cilantro

What you’ll need (serves 2):

  • 1 can Fish Tales sardines in olive oil, smoked
  • 2 tbsp mango chutney
  • ½ red onion, very thinly sliced
  • Handful of fresh cilantro
  • Naan bread (lightly toasted)

How to make it: Spread the mango chutney over warm naan bread. Top with the smoky sardines, sliced red onion, and fresh cilantro. Ready to share... or not.

Smoky sardines with kimchi, sesame mayo & cucumber

This one's for adventurous eaters. Kimchi brings loads of umami, sesame mayo adds richness, and fresh cucumber ribbons keep everything balanced. Serve on a sheet of nori or crusty bread for extra crunch.

What you’ll need (serves 2):

  • 1 can smoked Fish Tales sardines
  • 1 tbsp mayonnaise
  • 1 tsp toasted sesame oil
  • Cucumber (thinly sliced into ribbons)
  • 2 tbsp kimchi
  • Fresh red chili, sliced
  • Nori sheets or sturdy bread

How to make it: Mix the mayonnaise with the toasted sesame oil. Spread a thin layer onto a sheet of nori or a slice of bread. Top with the kimchi, cucumber ribbons, smoky sardines, and finish with the sliced red chili.
