In Iceland, everything revolves around fishing. The system is tightly managed to ensure future generations can continue to enjoy everything the sea has to offer. Cod is one of the most important species for fisheries across the island. Icelandic fishers are required to land their entire catch—even if they catch species other than cod. Everything is recorded and counts toward the national quota. This way, they make sure no more is fished than nature can handle.

- step 3 -Cod liver, a delicacy

Icelandic cod isn’t just praised for its delicious meat. The real treasure lies in its belly: the liver. The more a cod eats, the bigger, richer, and tastier its liver becomes! Across Iceland, cod fishers bring in their catch. Sometimes the liver has already been removed, sometimes it’s still inside. The livers are collected and brought to the factory—where they’re canned and shipped.

Cod fisherman Thorsteinn Olafsson goes out to sea about 200 days a year.

Cod fishing is deeply woven into the fabric of life across the island. One of Iceland’s fishermen is Thorsteinn Olafsson—our ambassador from Iceland. The liver from his cod is also used by several brands. He spends around 200 days a year at sea, which makes his time with family all the more precious. “I love seeing that my son is also interested in fishing and enjoys it as much as I do. I hope I can pass on cod fishing to the next generation through him,” he says.

  • In the northern North Sea, Fish Tales herring are caught with trawls and/or purse seines. Berry and his fellow fishermen use sonar techniques to search for schools of herring.
