
White asparagus with smoked salmon
Try asparagus with smoked salmon instead of ham. This combination makes this classic dish extra festive. Enjoy!
These asparagus are also an ideal appetizer. Use about 2 per person!
Bring a pot of water to a boil. Rinse the asparagus well, remove the tough ends, and peel them with a vegetable peeler.
Place the asparagus in the boiling water and cook for about 5 minutes – the cooking time depends on the thickness of the asparagus, they should not be fully cooked yet. Turn off the heat and let them sit in the hot water for another 10 minutes to finish cooking.
In the meantime, bring a pot of water to a boil and cook the eggs for 8 minutes. Rinse them under cold water, peel, and cut into large pieces.
Melt the butter in a saucepan.
Arrange the asparagus on plates, followed by the egg. Pour the melted butter over the asparagus and garnish with chervil. Place the smoked salmon on the side.
