Tuna Pad Krapow
Pad Krapow, also known as Pad Kra Pao, is a popular Thai stir-fry dish. Today we are making this dish with skipjack tuna. The tuna adds to this delicious combination of spicy, savory, and aromatic flavours.

Heat a wok until very hot. Add the oil, chillies, shallot, and garlic to the pan. Sauté for 1 to 2 minutes until everything is soft and golden brown.
Add the drained tuna and stir well. Add the sugar, soy sauce, fish sauce, and oyster sauce, and sauté for another minute.
Deglaze the pan with the stock or water. Wait until the liquid has reduced slightly. This should happen quite quickly because of the hot wok. Add the Thai basil and stir through until it wilts. Serve with rice and enjoy!
