Tom Yam Kung with Thai Basil
Tom Yam Kung is an incredibly flavorful soup that you can serve as a lunch dish, but if you make a bit more, it also works wonderfully as a main course.

Heat some oil in a cooking pot over medium heat. Add the red curry paste and cook for 1 minute.
Now add the lemongrass, galangal root, kaffir lime leaves, coconut milk, and broth. Bring to a boil, then add the shrimp and sugar snap peas, and reduce the heat. Let it simmer for 3 minutes.
Finally, add the oyster mushrooms and heat them through for another 3 minutes. Season with salt to taste.
Divide the soup into 4 bowls. Serve with bean sprouts, Thai basil, cilantro, a few rings of red chili pepper, and a lime wedge.
