
Shrimp Skewers with Spicy Aioli
Once these shrimp skewers hit the grill, you know it's going to be good. Juicy shrimp, sweet cherry tomatoes, and a spicy, creamy aioli combine to create a dish everyone will come back for. Easy to make and guaranteed to be the first to disappear!
If using wooden skewers, soak them in cold water for at least 1 hour to prevent them from burning on the grill.
For the marinade, mix the olive oil with the lemon juice, lemon zest, ginger powder, chili powder, and salt.
Toss the shrimp in the marinade, cover, and let them marinate in the refrigerator for at least 30 minutes.
Meanwhile, make the aioli. In a mortar, finely grind the garlic and bread to a smooth paste. Mix in the chili powder, then add the egg yolk. Whisk thoroughly. Gradually pour in the olive oil in a thin stream while whisking until a thick, creamy aioli forms. Season with a few drops of lemon juice, salt, and pepper.
Thread the shrimp and cherry tomatoes alternately onto the skewers.
Lightly grease the grill grate with oil and grill the skewers over direct heat for approximately 1–2 minutes per side, depending on the size of the shrimp.
Lightly sprinkle the skewers with smoked paprika powder and garnish with fresh herbs, if desired.
Serve immediately with the spicy aioli.
