
Noodle Salad with Tuna and Wafu Dressing
Wafu dressing is a traditional Japanese vinaigrette made from soy sauce, rice vinegar, mirin, and oil, often with added sesame oil or sesame seeds. In this dish, it tastes delicious poured over noodles with tuna.
Place the wakame in a bowl with a ½ liter of hot water and leave it to soak for 10 minutes. Then let the seaweed drain in a colander for 5 minutes. Cut the wakame into 2 cm pieces, and let it cool.
Cook the noodles according to the instructions on the packaging - until al dente.
For the dressing, whisk together the sesame oil, rapeseed oil, rice vinegar, mirin, and soy sauce in a small bowl. Set aside.
Briefly toast the sesame seeds in a dry pan until lightly colored. Set aside.
Drain the noodles in a colander, place them in a bowl, and toss with the wakame and three-quarters of the dressing. Divide the noodles between two bowls. Top each portion with tuna, sprinkle with spring onion and sesame seeds, and drizzle with the remaining dressing. Serve immediately.
