
Shakshuka with sardines
Making shakshuka is a breeze! This delicious and healthy brunch recipe from the Middle East is ready in no time and pairs perfectly with superfood sardines. By the way, you can also make shakshuka with other types of fish, like herring or salmon!
Warm a splash of olive oil in a covered frying pan over medium heat and sauté the onion, garlic, bell peppers, and chilli pepper for 3-4 minutes until softened.
Add the diced tomatoes, harissa, tomato paste, and cumin, and let it simmer on low heat for 15 minutes.
Make four wells in the tomato sauce and crack an egg into each well. Press the sardines into the sauce around the eggs, cover the pan, and let the eggs set for 10 minutes. Season with salt and pepper, sprinkle with lemon zest, and serve with plenty of coriander.
