salmon
- step 1 -Where the mountains meet the sea

In southern Chile, between snow-capped peaks and deep-blue fjords, lies the Aysén region. It’s remote, wild, and stunningly pure. The cold, oxygen-rich ocean water flows straight from the Andes – the perfect place to raise Coho salmon. Here, nature sets the pace, and the people working along these shores treat it with the respect it deserves.

- step 2 -Salmon farming with care and purpose

At Salmones Aysén, everything starts small – in their own hatcheries. The young salmon are carefully raised and only moved to sea cages when they’re ready. In the cool ocean waters, they grow strong and healthy. The team checks on the fish and the water every day. It’s not about speed or scale – it’s about quality, care, and doing things right.

- step 3 -Fully traceable, proudly transparent

Salmones Aysén is in full control – from hatch to harvest. That means every fish can be traced all the way back to its origin. With regular “open door” days for local communities, they show exactly how responsible salmon farming looks in practice. Transparent, sustainable, and honest – just the way it should be.

David grew up in Cofalmo, a small countryside town near Osorno

He’s been working in the salmon industry for over 15 years – and he loves it: “Being outdoors, working with living creatures, and helping bring good food to people’s tables – that’s what drives me.” At Salmones Aysén, David takes care of the fish with calm dedication. And when he’s not at work, he spends time with his children or visits his mother to recharge in the peace of nature he calls home.

Frequently asked questions
  • Are you pregnant? Then you can safely enjoy Fish Tales smoked Norwegian salmon, as long as you heat it thoroughly, for example in a casserole. This fits perfectly within the advice of the Dutch Nutrition Centre to eat fish twice a week during pregnancy. During your pregnancy, you can also enjoy our wild Sockeye salmon. For this type, it's better to eat the fish up to once a week and to heat it thoroughly.

  • Quality and safety are always our top priorities. Each batch of salmon is thoroughly checked in a laboratory for harmful bacteria and other unwanted substances. After smoking and slicing, the salmon is vacuum-packed. This ensures that no harmful substances or bacteria can enter the packaging. This way, we guarantee a fresh and safe product that you can enjoy with peace of mind!

  • Atlantic salmon is the most common salmon species found in supermarkets. This is because it is widely farmed in Norway, which results in a lower price. Its taste is mild and the fish is very fatty, making it suitable for many dishes. Fish Tales' sockeye salmon is wild-caught in Alaska. This salmon has a deep red color and a very rich flavor. Coho salmon, like Atlantic salmon, is farmed. Its taste is fuller than that of Atlantic salmon, with a firmer texture and a darker color.
