Pesce Marinato! This lovely Italian starter with fresh scallops is easy to make and tastes like heaven on a plate.
Preparation
1 If you use scallops in the shell make sure to clean them, get rid of the sand and use a spoon to remove the scallops from the shell. For this recipe, only use the white meat of the scallop.
2 Cut the scallops in 0,5 centimetre thin slices. Fold the slices in some plastic foil and gently press on it. The thinner the slices the sooner the slices are cooked.
3 If the scallops are flat enough, lay down the slices side by side on a plate and top them of with some vinegar until the fish is covered. Let it cook for 15 minutes.
4 After 15 minutes, get rid of the vinegar and dab off the remaining vinegar. Divide the scallops onto the plates and pour over some olive oil, followed by the garlic, mint and parsley. Finish it with a bit of spring onion, rocket, chili flakes and some lemon zest. Enjoy!
