Salmon burger

Ingredients

  • 160-200 g. salmon fillet, skinless
  • 1 spring onion
  • 1 hand of capers
  • 1 tsp. French mustard
  • 1 egg
  • 3 tbsp. bread crumb
  • 1 hand of parsley
  • 1 hand of parsley
  • 3 tbsp. mayonnaise
  • Zest of 1 lemon and juice of 1/2 lemon
  • 2 burger buns
  • 4 leaves of iceberg lettuce
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 6 slices of cucumber
  • 1 red onion, cut in rings
  • Olive oil
  • Pepper and salt

How to prepare

It is burger time! Who doesn’t love a nice burger? This special salmon burger with a tasty lemon mayonnaise is great! It is perfect for a healthy and fresh lunch or dinner.

Preparation

  • 1 Chop the salmon roughly, so you can still taste the texture.
  • 2 Cut the spring onion and capers and add this to the salmon.
  • 3 Add the mustard and add some pepper and salt.
  • 4 Add the egg and the breadcrumb and mix this well.
  • 5 Cut the parsley and basil and add this to the salmon and mix well. Make 2 round burgers with a thickness of 1 to 1,5 fingers.
  • 6 For the lemon mayonnaise: Add the lemon zest and juice to the mayonnaise and mix this well with some pepper.
  • 7 Cut the hamburger bun in half and grill both sides so the bread is toasted.
  • 8 Add a bit of olive oil to both sides of the salmon burger and put it in a pan on medium heat. Let it fry for 3 minutes per side.
  • 9 In the meanwhile: add the lemon mayonnaise on the bottom side of the bun and add the lettuce and avocado.
  • 10 Once the salmon burger is ready, put it on the bun. Add the tomato, cucumber and red onion and add some pepper.
  • 11 Add some lemon mayonnaise on the top side of the bun and put this on the burger. Serve immediately. Enjoy!
