Fish soup from Finland

Ingredients

  • 1 tbsp butter
  • 500 gr fish bones & heads
  • 1 leek
  • 2 onions
  • 1 large carrot
  • 3 bay leaves
  • water
  • 200 gr potato cubes
  • 100 gr carrot slices
  • 100 gr filleted fish pieces
  • 1 handful chopped dill
  • salt and pepper

How to prepare

This fish recipe is a classic and traditional recipe for Finnish fish soup. Cooked together with our friend Christian Stevenson, DJ BBQ, in cold Finnish Lapland!

Preparation

  • 1 Add some butter to a pan and simmer the onion, leek and carrot. Add the fish bones and heads, now add water until all is covered. Add the bay leaves and some black pepper.

    Let this simmer. As soon as some foam is appearing on the surface of the stock, skim it off with a spoon.
  • 2 Sieve the stock after 20-25 minutes.
    Take another pan and add 50% of the stock to cook the potatoes and carrots in.
  • 3 As soon as they are cooked ( check it with the point of your knife) add the rest of the stock and the fish fillets.
    After 2 minutes add the dill and season with pepper and salt.
  • 4 Serve with some bread.
