1 Fry the bacon on low heat until crispy and golden brown. Take the bacon out of the pan and remove excess fat with kitchen paper.
2 Open the oysters and remove them from the shell. Save the oyster juice for later.
3 To make the dressing, mix the mustard, white wine vinegar and 1 tablespoon of oyster juice. Add the sunflower oil drop by drop while whisking the dressing. Flavour with some tarragon and white pepper.
4 Flour the oysters to prepare them for frying.
5 Melt 2 big pieces of butter in a frying pan, place the oysters in the pan and fry them until golden brown, but make sure they stay soft.
6 Take the fresh lettuce leaves and put some dressing over them. Place the lettuce, bacon and then the oysters on a sandwich. Serve them while they are warm. Enjoy!
