Oyster sandwich

Ingredients

  • 6 big oysters
  • 6 bacon strips
  • 1/2 tbsp. mustard
  • 1 teaspoon white wine vinegar
  • 50 ml sunflower oil
  • 1 twine of tarragon, chopped
  • white pepper
  • 3 g. flour, sieved
  • 100 g. butter
  • 1 lettuce
  • 2 toasted buns

How to prepare

A delicious seafood dish: Oyster sandwich with salty bacon and crispy lettuce! Eat it for lunch or as a snack. Enjoy!

Preparation

  • 1 Fry the bacon on low heat until crispy and golden brown. Take the bacon out of the pan and remove excess fat with kitchen paper.
  • 2 Open the oysters and remove them from the shell. Save the oyster juice for later.
  • 3 To make the dressing, mix the mustard, white wine vinegar and 1 tablespoon of oyster juice. Add the sunflower oil drop by drop while whisking the dressing. Flavour with some tarragon and white pepper.
  • 4 Flour the oysters to prepare them for frying.
  • 5 Melt 2 big pieces of butter in a frying pan, place the oysters in the pan and fry them until golden brown, but make sure they stay soft.
  • 6 Take the fresh lettuce leaves and put some dressing over them. Place the lettuce, bacon and then the oysters on a sandwich. Serve them while they are warm. Enjoy!
