Pasta with mussels in tomato sauce

Ingredients

  • 7 -ounce. penne rigate
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 chilli, finely chopped
  • handful of parsley stalks, finely chopped
  • 1 tsp. tomato paste
  • 14-ounce tomato paste
  • pepper and salt
  • 35 1/3 -ounce fresh mussels, washed
  • 10 basil leaves, roughly chopped
  • olive oil

How to prepare

You can do a lot with mussels, but in this recipe we show you how to make a delicious, super quick pasta with mussels in a tomato sauce! A really rustic and easy recipe for the whole family.

Preparation

  • 1 Cook the pasta according to the package instructions.
  • 2 Put a pan on medium-high heat with a dash of olive oil.
  • 3 Add the onions and let this simmer for 2 minutes.
  • 4 Add the red chilli, garlic cloves and parsley. Let this simmer for another minute. Add the tomato paste and mix everything well. Let this simmer for 2 minutes.
  • 5 After 2 minutes, add the peeled tomatoes and mash the tomatoes with a spatula or fork. Season with some salt and add a bit of pasta water to the mixture. Let everything simmer for 10 minutes.
  • 6 Drain the pasta when it is al-dente. Let the pasta cool down by rinsing them under cold water.
  • 7 Once the sauce simmered for 10 minutes, add the mussels and basil leaves. Mix everything well and put a lit on the pan. The mussels are ready when the shells are open. Mix everything well.
  • 8 Once the mussels are ready, add the pasta. Mix everything and add some pepper. Serve the mussels in tomato sauce immediately. Enjoy!
