Salad with sour herring and apple

Ingredients

  • 350 g waxy potatoes, peeled
  • 2 tsp horseradish
  • 3 tbsp crème fraîche
  • 8 pickled herrings, from the glass (keep the marinade)
  • 2 Granny Smith apples, peeled and thinly sliced (add a little lemon juice to preserve the fresh colour of the apples)
  • 1 red onion, cut into thin rings
  • 2 tablespoons dill, finely chopped
  • A few drops of Worcestershire sauce
  • Pepper from the mill
  • salt

How to prepare

A simple recipe for a delicious fresh salad with pickled herring, potato and apple.

Preparation

  • 1 Boil the potatoes in plenty of water with a little salt and make sure that the potatoes do not boil too long and do not become too soft. Then rinse them in a bowl of cold running water so that the potatoes cool down quickly and thoroughly.
  • 2 Cut the cooked potatoes into slices, about half a cm thick.
  • 3 For the dressing, mix the horseradish with the crème fraîche and add 1 tablespoon of marinade from the herring glass. Mix again and season with pepper, some salt and a dash of Worcestershire sauce. Set aside.
  • 4 Cut the herrings into strips about 3 cm thick. If you cut diagonally, they become nice long strips.
  • 5 Put all ingredients in a large bowl and mix the potatoes, herring strips, apple slices, pieces of onion and dill. Add the dressing and mix again. Taste again and if necessary add a little salt, pepper and Worcestershire sauce to enhance the flavour.
