Crab club sandwich

Ingredients

  • 200 g (queen/snow-)crab meat, cooked
  • 4 table sp. of mayonnaise
  • zest of half a lemon
  • juice of a quarter lemon
  • freshly ground pepper
  • a hand of chives
  • 1 avocado
  • 6 slices of toasted bread
  • wooden sticks
  • 1 romaine lettuce
  • 2 toasted buns

Preparation

  • 1 When you have a whole crab, start with breaking off the legs. Than break the legs again and use the parts closest to the body of the crab. Nog cut your legs in length and scoop out the meat with your thumb.
  • 2 Now start with the mayonnaise as a base. Add the lemon’s zest and lemon juice to the mayonnaise together with some freshly ground pepper and finely chopped chives. Mix it well with a spoon.
  • 3 Add two table spoons of your mayonnaise to the crab meat. Mix with a fork.
  • 4 Slice the avocado in half and take out the stone. Make slices in de avocado and then scoop out the entire avocado. This way you already have avocado slices.
  • 5 Cut off some leaves of your Romaine lettuce and you can start building your sandwich! Start by spreading some of your mayonnaise on your toast. Then add some lettuce. Spread your crab mix over the lettuce, top it off with a few slices of avocado. Now add the same layer again to make a true sandwich!
  • 6 Use the wooden sticks to keep your sandwich together.
  • 7 Your queen crab club sandwich is ready!
