Cod crispy fried in dough and out comes the perfect treat! And what completes this classic perfectly is homemade tartar sauce.
Preparation
1 Defrost the cod in the packaging in the refrigerator.
2 Heat the oil in a pan (or deep fryer) to 180°C.
3 Remove the cod from the packaging. Pat cod dry on both sides. Divide the cod in half. Salt on both sides and set aside.
4 Mix flour, baking powder and half a teaspoon of salt in a bowl.
5 Stir with a whisk and add the sparkling water in the meantime until a uniform dough is formed. Then place the dough in the refrigerator for at least 20 minutes.
6 Chop the shallot finely. Chop parsley finely.
7 Mayonnaise with capers, shallot, parsley and juice ½ Mix lemon in a bowl. Season with salt and pepper. Set aside.
8 Take the dough out of the fridge and roll the cod in it.
9 Fry the cod for 6-8 minutes until golden brown. To make the fish slightly crispy, halfway through, spread an extra spoon of batter on the cod.
10 Remove the cod from the pan and let it drip off on kitchen paper.
11 Serve the cod with the sauce and a lemon wedge.
