Cod wrapped in parma ham

A delicious take on a "surf & turf" recipe, a piece of delicious cod wrapped in salty parma ham!

Ingredients

  • olive oil
  • 2 carrots
  • handful of peas
  • handful of sugarsnaps
  • 1 broccoli
  • 2 fillets of cod
  • 6 slices of parma ham
  • salt and pepper
  • handful of fresh sage leaves
  • 2 tbsp butter

How to prepare

A delicious take on a “surf & turf” recipe, a piece of delicious cod wrapped in salty parma ham!

Preparation

  • 1 Take the piece of cod and two sage leaves, place them on the fish with 2 knobs of butter.

    Season with pepper. Wrap two slices of parma ham around the piece of fish and secure it with some toothpicks.
  • 2 Peel the carrots. Cut the broccoli into smaller sizes and remove the ends and threads of the sugarsnaps. Cut the asparagus.

    Put some olive oil into a medium/hot pan. Fry the cod about 1/1,5 minutes on each side, this is just to make the ham crispy, and not to cook the fish.
  • 3 Remove the fish from the pan and place in a baking tray. Bake for about 8-10 minutes in the oven at 120 degrees celsius.

    Meanwhile, boil the vegetables in a stock. Use seasonal
    vegetables and cook them in order of size and hardness.
  • 4 Take the cooked veggies from the pan and melt over a knob of butter. Season with pepper and salt.

    Pile up the vegetables on a beautiful plate, and place the cod on it. Don't forget the sage-infused butter!
