Cod in tomato sauce

Ingredients

  • 1 cod fillet, deep-frozen
  • 1 onion
  • 2 cloves of garlic
  • 1 can peeled tomatoes (400 g)
  • 1 tsp red wine vinegar
  • 1 tablespoon basil leaves, finely chopped
  • extra virgin olive oil
  • salt and pepper

How to prepare

Cod fillet from the freezer shelf, a can of tomatoes and a few fresh spices conjure up this delicious dish on the table in no time at all. Perfect to share with your loved ones during a nice dinner.

Preparation

  • 1 Defrost the cod in the packaging in the refrigerator.
  • 2 Remove the cod from the packaging.
  • 3 Pat cod dry on both sides and set aside.
  • 4 Cut onion into rings.
  • 5 Finely chop the garlic.
  • 6 Place a tablespoon of olive oil in a large saucepan and sauté the onion for 2-3 minutes at medium heat.
  • 7 Add garlic. Stir well and after a minute add the tomatoes and red wine vinegar.
  • 8 Stir and add the basil leaves (keep some leaves for garnishing).
  • 9 Stir and then mash to a fine sauce with a pestle.
  • 10 Add the cod and cover the pot.
  • 11 Sprinkle with salt and pepper.
  • 12 Remove the pot from the stove after 6-8 minutes.
  • 13 Cut the cod into two pieces and serve with the sauce and additional basil leaves.
  • 14 Serve the dish with remaining basil leaves.
