Tuna rolls & salmon treat

Ingredients

  • Tuna rolls ingredients:
  • 2 cans of (sustainable) tuna in water
  • 1 red onion
  • 1 clove of garlic
  • 2 tsp. capers
  • juice of 1/4 lemon
  • 1 tbsp. dill
  • 1 tbsp. cumin
  • 1/2 cucumber in small cubes
  • pepper
  • 2 big lettuce leaves (romaine or iceberg)
  • Salmon treat ingredients:
  • 1 avocado, in cubes
  • 200 ml. goat yoghurt
  • 1 tbsp. dill
  • sea salt and black pepper
  • 100 g. smoked (sustainable) sockeye salmon
  • 1 ring (or tinfoil to make a ring)
  • olive oil
  • handful of rocket

How to prepare

Bart cooked this recipe together with Jacqueline van Lieshout. Jacqueline is a famous Dutch cookbook writer and they’ve known each other for years now. So, Bart decided to invite her to come to the Fish Tales studio and make two delicious recipes from her new book. Together they made healthy tuna rolls and a delicious treat with smoked sockeye salmon and avocado. Two amazing little recipes which are so easy to prepare and are great as a starter or healthy snack. Enjoy!

Preparation

  • 1 Tuna rolls:
  • 2 Drain the 2 cans of tuna in a bowl.
  • 3 Chop the red onion in small cubes.
  • 4 Chop the garlic or press the garlic with a garlic press.
  • 5 Chop the dill in small pieces.
  • 6 Mix the drained tuna, chopped onions, garlic, dill, juice of 1/4 lemon, capers, cumin, chopped cucumber and pepper.
  • 7 Put it in the fridge for half an hour.
  • 8 Present the tuna mix on big leaves of lettuce!
  • 9 Salmon treat:
  • 10 Mix the avocado cubes, yoghurt, chopped dill and season with sea salt and black pepper.
  • 11 If you don't have a ring to put the mix in, you can make one yourself by folding some tinfoil in a 3 cm wide stroke and make a ring of it.
  • 12 Put the ring on a plate and fill the ring up with the mixture.
  • 13 Remove the ring en fold slices of smoked salmon around the mixture.
  • 14 Top off with some olive oil and rocket.
  • 15 Season with salt and pepper. Enjoy!
