Seafood Mie Goreng with scallops and shrimp

Ingredients

  • 200 g. mie
  • 1 leek, washed and cut in rings
  • 2 big carrots, thinly sliced
  • 2 spring onions, chopped
  • 2 shallots, chopped
  • 2 garlic cloves, chopped
  • 6 scallops, cut in half horizontally
  • 200 g. peeled and cooked shrimps
  • 2 eggs
  • vegetable oil
  • big handful of bean sprouts
  • 1 tsp. fish sauce
  • 2 tsp. dark soy sauce
  • 1 tsp. sesame oil

How to prepare

On a trip to Indonesia, Bart got so inspired by their gastronomy and local dishes, he decided to take you with him by making this seafood Mie Goreng with delicious scallops and shrimp!

Preparation

  • 1 Cook the noodles al dente. Once the noodles are ready, cool it down under cold running water.
  • 2 Put a pan on medium high heat and add a bit of oil, the garlic cloves and the shallot. Let this simmer.
  • 3 Add the leek, carrot and spring onion and fry this shortly. Add the scallops and bean sprouts and let this simmer.
  • 4 Beat an egg and put all the vegetables to one side of the pan. Add a bit of oil and add the egg. Mix the egg with the vegetables.
  • 5 Add the shrimps and let this simmer for a while. Afterwards, add the noodles to the pan.
  • 6 Season it up with the fish sauce, salty and sweet soy sauce, sesame oil and white pepper. Serve the seafood mie goreng immediately. Enjoy!
