Poached oysters and black bean sauce

Ingredients

  • 24 oysters
  • sunflower oil
  • 3 tbsp. black bean paste
  • rough seasalt
  • 1/4 cucumber, seeds removed, finely chopped in cubes.
  • 1 red chilli, seeds removed, finely chopped
  • zest and sap of 1/2 lime
  • handful of coriander leaves, finely chopped

How to prepare

Oysters in black bean sauce! These poached oysters and black bean sauce are a great Asian inspired recipe. Today we poach them in their own liquid, and serve them in the shell with black bean sauce, some cucumber, chili and lime zest. Quick, easy and super delicious.

Preparation

  • 1 Open the oysters, carefully remove the oyster meat out and save the liquid. Sieve the liquid.
  • 2 Save the hollow part of the shell and throw the flat side away.
  • 3 Take a pan and boil the oyster liquid. Turn of the heat and add the oysters. Poach the oysters for 3-4 minutes. Turn regularly. Take out the oysters.
  • 4 Add the black bean paste to the hot oyster liquid and mix this well. Cook for 1 minute on low heat. Put on the side.
  • 5 Divide rough sea salt over a plate and put the shells on the salt. Put 1 oyster in every shell and put a bit of the black bean sauce on top. Finish with the cucumber, red chilli, lime juice, coriander and lime zest on top.
