Plank smoked salmon

Ingredients

  • 500 g salmon fillet, skin on
  • salt
  • sugar
  • Jaloviina or the whiskey
  • wooden board
  • hammer
  • nails

How to prepare

In this recipe we’ll show you how you can make plank smoked salmon yourself! This is a really easy and tasty way to smoke salmon at home, with only a few basic ingredients.

Preparation

  • 1 Make an open fire.
  • 2 Put the salmon on the wooden board with the skin down. Sprinkle the salt over the salmon. Be generous.
  • 3 Mix the Jaloviina or the whiskey with the sugar and pour this over the salmon. Score the salmon with a knife to let all the flavours infuse.
  • 4 Use a small hammer and knife to make holes in the salmon. Put the wooden nails in the holes and use the hammer to put them into the wooden board.
  • 5 Place the board vertically against the open fire. For small fillets: let it for around 40 minutes. For large fillets: let it smoke for around 60-80 minutes. Smoke the salmon while regularly turning the board around.
  • 6 The plank smoked salmon is ready when the meat easily falls off the skin. Enjoy!
