Masala grilled sardines

This is the kind of this you want to serve on your summer night dinner party! The sardines are golden-brown and have a nice kick to them, and would work really nice with a fresh herb salad and vinaigrette.

    Descale the fish, cut off the fish tail, top fin, underside and head.
    Take out the guts.
    Score the fish so the spices can get in.

    Put turmeric powder, chilli powder, pepper and salt in a bowl and mix them.
    Roll in and cover the sardines with the mixture.
    Fry the sardines 3-5 minutes on each side.
    Pop the sardines on some kitchen paper to get rid of the oil.
    Enjoy!
