Kibbeling (Dutch fish nuggets) with ravigote sauce and sweet applesauce

Ingredients

  • APPLESAUCE
  • 4 sweet apples
  • 1 cinnamon stick
  • 1 tbsp sugar
  • RAVIGOTE SAUCE:
  • 1 egg
  • 200 ml mayonnaise
  • 8 sprigs of flat parsley, finely chopped
  • 1 shallot, finely chopped
  • 1 pickle, finely chopped
  • 1 tbsp capers
  • 1 tbsp chopped chives
  • salt and pepper
  • KIBBELING:
  • 200 g flour
  • 2 tsp baking powder
  • 2 egg yolks
  • 200 ml milk
  • 2 tsp paprika powder
  • 550 g cod, in pieces of 3-4 cm
  • 2 lemons, halved
  • peanut oil
  • salt and white pepper

How to prepare

Who loves fish and chips or fish nuggets? Then let me introduce you to: kibbeling! A true Dutch snack which you can easily make yourself.

Prepare this classic dish with sustainably caught cod or any other white fish and serve it with delicious ravigote sauce and sweet applesauce.

Preparation

  • 1 Peel the apples, remove the cores, cut into pieces and place the apple pieces with the cinnamon stick and the sugar in a saucepan. Pour in a small layer of water and bring to a simmer over medium heat. Cook the apples soft and smooth in 15 to 20 minutes while stirring in between. Allow to cool down, cover with plastic wrap and put in the fridge until use.
  • 2 Make the ravigote sauce. Boil the egg in a large pot for 8 minutes. Rinse under cold, running water, peel and cut into pieces. Stir the mayonnaise into a bowl and mix in the parsley, gherkin, shallot, capers and chives. Put the cooked egg through a sieve into the bowl with the other ingredients. Mix well and season with salt and pepper. Set aside.
  • 3 Mix the flour, baking powder, egg yolks, milk, 1 teaspoon of paprika powder and 1 teaspoon of salt with a whisk in a large bowl until it is a smooth mass without lumps.
  • 4 Heat plenty of peanut oil to 180C in a deep pan with a thick bottom so that you can fry the pieces of fish, or use a deep fryer. Test whether the oil is hot enough to fry by using a kitchen thermometer or by letting a little drip of batter fall in the oil. If the batter starts hissing and comes directly to the surface, the oil is hot enough.
  • 5 Put the pieces of cod through the batter and fry the cod golden brown in 3-4 minutes. Let the kibbeling drain on kitchen paper.
  • 6 Powder the paprika powder over the kibbeling. Serve with apple sauce, ravigote sauce and lemon.
