Delicious and fresh fish dish: Anchovies with gnocchi and sage! Perfect as lunch or dinner!
Soak the anchovies in luke warm water or milk for a few minutes. Drain and pat dry.
Clarify the butter. Put a pan on middle-high heat and melt the butter completely, without getting brown. Take the pan off the heat and scoop out the white milk solides with a spoon.
Put a pan on middle-high heat. Fry the sage leaves in the clarified butter until they are crispy. Take the pan off the heat, remove the leaves and put them on some paper towels.
Cook the gnocchi according to the package.
Divide the gnocchi over 4 plates. Pour the sage butter over the gnocchi and sprinkle with some parsley and pepper.
- tin anchovy fillets in olive oil, 50 gr
- milk (to desalinate the anchovies)
