Want to give your sardines a smoky touch? Then light them up. Perfect for a picnic, camping trip, or outdoor get-together with friends. And it looks spectacular — you literally set the can on fire! By lighting oil-soaked paper towel on top, you warm the fish and infuse it with a subtle smoky flavor. It’s like a pocket-sized BBQ, but with a twist.

Safety first, of course: Make sure the can is placed on a sturdy, non-flammable surface (like a tile, stone, or metal plate), and use unbleached paper towel.

How to Make It

Smokey sardines work best with sardines in olive oil or chili oil. These contain just a bit more oil than, say, sardines in tomato sauce — and that’s exactly what you need to keep the paper burning properly.

Found a suitable can? Then it’s super simple: fold a sheet of unbleached paper towel in half, place it over the open can, and gently press it into the oil. Light the paper and let it burn for 6 to 8 minutes. The longer you wait, the stronger the smoky flavor will be.

Had enough smoke? Gently blow out the flame, let the can cool for a moment, and remove the paper. Done! Your sardines now have a deliciously subtle smoky flavor. Finish them with your favorite toppings — here are three of ours.

1. Smokey Sardines in Chili Oil with Feta Cream, Roasted Bell Pepper & Basil

This Mediterranean combo is creamy, fresh, and spicy all at once — perfect on a crunchy slice of toasted sourdough.

What you’ll need (serves 2):

  • 1 can Fish Tales sardines in chili oil
  • 3.5 oz feta
  • 2 tbsp yogurt or crème fraîche
  • 1 roasted red bell pepper (jarred or homemade)
  • Fresh basil
  • Salt & pepper
  • Toasted bread

How to make it: Make the feta cream by blending the feta and yogurt until smooth and spreadable. Season with pepper. Spread a generous layer on toasted bread, top with roasted pepper, add the smokey sardines, and finish with basil leaves and a pinch of salt.

2. Smokey Sardines in Olive Oil with Mango Chutney, Red Onion & Cilantro

A bright, sweet-and-spicy flavor explosion — amazing with naan bread, perfect for a summer lunch or appetizer.

What you’ll need (serves 2):

  • 1 can Fish Tales sardines in olive oil, smoked
  • 2 tbsp mango chutney
  • ½ red onion, very thinly sliced
  • Handful of fresh cilantro
  • Naan bread (lightly toasted)

How to make it: Spread some mango chutney on a piece of warm naan. Add the smokey sardines, red onion, and cilantro leaves. Ready to share — or not!

3. Smokey Sardines with Kimchi, Sesame Mayo & Cucumber

Use any sardines you like — spicy ones work great!

This one’s for the bold: umami everywhere with kimchi, toasted sesame mayo, and fresh cucumber ribbons. Serve on a sheet of nori or a slice of bread for a crispy bite.

What you’ll need (serves 2):

  • 1 can smoked Fish Tales sardines
  • 1 tbsp mayonnaise
  • 1 tsp toasted sesame oil
  • Cucumber (thinly sliced into ribbons)
  • 2 tbsp kimchi
  • Fresh red chili, sliced
  • Nori sheets or sturdy bread

How to make it: Mix the mayo with sesame oil. Spread a little on a nori sheet or slice of bread. Top with kimchi, cucumber ribbons, smokey sardines, and some red chili.
