Mackerel spread

Ingredients

  • 2 smoked mackerel fillets, skin on
  • 2 tbsp. mayonnaise
  • 2 small onions, finely chopped
  • 1 granny smith apple, finely chopped
  • 1 tsp. Dijon mustard
  • 10 chive sprigs, finely chopped
  • 1 spring onion, roughly chopped
  • 1 tbsp. capers
  • zest and juice of 1/2 lemon
  • 1 red onion, in rings
  • 10 basil leaves
  • salt and pepper

How to prepare

I love smoked mackerel! Mackerel is a really oily fish which makes it ideal for smoking. Today I am using these beautiful Scottish smoked mackerel fillets to make an incredible mackerel spread, to serve on your party, to have as a snack or just for a Sunday breakfast! I’m serving mine on Scottish Oatcakes, but feel free to use crackers, toast or anything else.

 

Preparation

  • 1 Take the skin off the mackerel and peel the meat into chunks. Check carefully for remaining bones.
  • 2 Add the mayonnaise, onion, granny smith, mustard, chives, spring onion, capers and lemon juice to the mackerel and mix until you have a rough spread. Season with salt and pepper.
  • 3 Divide the spread over the toasts and garnish with red onion rings, basil leaves and extra chives. Finish the snacks with lemon zest. Enjoy!
