

Shrimp skewers from the BBQ
These BBQ shrimp skewers with spicy pineapple chutney are easy to make and a perfect match for a beautiful, sunny day! Watch the entire video below.
Peel the pineapple and cut into 1-inch cubes.
Sauté the onion and chili in a large pan, then add the pineapple.
Add the sugar, grated ginger, 1/2 teaspoon salt, vinegar and water and bring to a boil. Simmer for 20 minutes.
Meanwhile, mix the shrimp with the vegetable oil in a bowl and season with salt. Stick 3 shrimps on each skewer and grill 2-3 minutes on each side on the barbecue.
Mash the pineapple mixture until you have a rough chutney. Put the chutney in a small bowl and add the zest of 1/4 lime, the cilantro and spring onion.
Squeeze half a lime over the shrimp and then remove them from the barbecue. Serve the shrimp with the pineapple chutney and finish with some cilantro.
