Quinoa-Tabbouleh with Sardines

Cook the quinoa according to the instructions on the packaging. Set aside and let cool.
In a large bowl, mix the parsley, mint, spring onion, green chilli pepper and diced tomatoes with the quinoa. Add the lemon zest and juice, season with salt and pepper and make the tabbouleh extra creamy with a generous splash of olive oil.
Distribute the sardine fillets and quartered tomatoes over the tabbouleh and serve immediately.
