

Potato Salad with Herring & Za'atar Yogurt
What’s more Dutch than a fresh **Hollandse Nieuwe**? Rich, full of flavor, tender yet firm. Herring with onions straight from the hand is a classic, of course, but it’s just as delicious in salads! Try this potato-herring salad, with za’atar for an extra kick!
Bring a pot of cold water with a pinch of salt and the potatoes to a boil. Cook the potatoes for 15-20 minutes until tender, then drain and let them cool.
Cut the potatoes into bite-sized pieces. Slice the kohlrabi into thin slices and mix them with the lime juice. Let sit for 5 minutes. In a bowl, combine the pearl onions, pickles, herring, and kohlrabi with the potatoes.
In another bowl, mix the mayonnaise with the yogurt and za’atar, then toss the dressing through the salad. Garnish with chervil and sprinkle with extra za’atar and salt.
