
Herring crostini with roasted tomatoes & ricotta
Crostini, but make it bold. Creamy ricotta, sweet roasted tomatoes, and fresh herring come together on a crispy slice of baguette. It’s simple, vibrant, and full of flavor—perfect for sharing at your next gathering. But honestly? You might want to keep it all to yourself.
Preheat the oven to 390 °F (200 °C).
Place the vine tomatoes in an oven dish. Drizzle with a bit of olive oil and add the half garlic head (cut side down, unpeeled).
Roast for about 25 minutes, until the tomatoes start to char and the garlic is soft.
Remove from the oven and let cool slightly. Squeeze the garlic cloves out of their skins and mix them into the roasted tomatoes. Tear in some fresh basil leaves and season with salt and pepper.
Place the sliced baguette on a baking tray and toast in the oven for about 5 minutes until golden and crisp.
Spread each slice with a generous spoonful of ricotta. Spoon the roasted tomato mixture on top.
Finish with a piece of herring on each crostini. Serve immediately, enjoy!
