Mix the crème fraîche with the sour cream, chopped dill and chives, lemon zest and juice, and a good pinch of salt and pepper. Stir in the already chopped red onion and pickles from the herring package. Give it a quick mix until you’ve got a smooth, fresh, and creamy topping.
Spoon a little bit of the mixture onto each chip. Cut the herring into bite-sized pieces and place one on top. Finish with a small spoonful of salmon roe for that salty, fancy crunch. Serve right away!
