
Greek-style Octopus Salad

Place the garlic, red onion, oregano, lemon zest and juice, vinegar, olives, oil, and half of the parsley in a large bowl and mix everything together.
Toss the octopus with the dressing and set aside.
Mix the feta with Greek yogurt, the remaining parsley, and lemon juice. Season with salt and pepper to taste.
In a bowl, mix the cucumber, tomato, octopus, and dressing, and serve with whipped feta
