David grew up in Cofalmo, a small countryside town near Osorno

He’s been working in the salmon industry for over 15 years – and he loves it: “Being outdoors, working with living creatures, and helping bring good food to people’s tables – that’s what drives me.” At Salmones Aysén, David takes care of the fish with calm dedication. And when he’s not at work, he spends time with his children or visits his mother to recharge in the peace of nature he calls home.

  • Atlantic salmon is the most common in supermarkets. This is because it is abundantly farmed in Norway and therefore has a lower price. It's flavour is mild and the fish is very fatty, making it accessible for many dishes. Fish Tales sockeye salmon is wild caught in Alaska. It has a deep red colour and a very rich flavor. Coho salmon, like Atlantic salmon, is farmed. It's flavour is fuller than Atlantic salmon, with a firmer texture and a darker colour.
